Tuesdays with Dorie - Sweet Cream Biscuits

I missed a huge milestone last post! :( It was my 100th post! And, I didn't even realize it until today when I signed into my blog and saw that I had 100 posts. This post is 101. So, Happy 100th post (a day late) to me!!!

Okay, now on to the real business here...biscuits! This week Melissa of Love at First Bite (don't you just love that name?) picked Sweet Cream Biscuits as her choice for Tuesdays with Dorie. Melissa has a wonderful blog, takes gorgeous pictures and has the most adorable little boy who makes appearances in her posts from time to time. Biscuits are one of those things that often strike fear in the hearts of bakers. They can be so temperamental...the biscuits, not the bakers. Well, bakers can be temperamental too, but that would be for another post. I mentioned in a post a while back that I once "helped" my Mom make biscuits by patting them all down before they went into the oven. None of them rose and Mom couldn't figure out why she had "hockey pucks" instead of tall fluffy biscuits. :}

Since then I have made many a batch of biscuits myself and think I do alright. I haven't had any hockey pucks, though occasionally my biscuits don't rise really tall. These fell somewhere in between flat and really tall. I thought they were about the perfect height myself.

Super easy to make because there is no butter to have to work into the flour. The fat that the butter usually supplies is in the heavy cream you use. Flour, baking powder, sugar, salt and heavy cream. If you mix it with a light hand, and treat it somewhat gently you are rewarded with light, tender, delicious biscuits! I served mine with just a little butter on them,  along side some chicken tenders I made. The next day I used them to make sausage and egg biscuits. They were delicious both ways. Melissa used hers with sausage gravy...I sure could go for a plate of that right now...maybe I will go whip up another batch of these for lunch!  :)

  1. Reading all these blogs about biscuits is making me really hungry!! Yours are no exception. I had mine with cream and jam. Will have to try them with a savoury meal sometime. The biscuits & gravy idea could be lethal!

  3. Oh, you southern girls and your biscuits...perfect ones each and every time! Yours look lovely. I think I was supposed to put them in a basket as everyone seems to have done that...oops. Happy 101st!

  15. Congrats to hitting the big 1-0-0 post! It's a milestone indeed. Love that last picture with the melting butter. It's making me upset that I can't reach into my computer and just take it. *hand hitting computer screen repeatedly* Ouch. Ouch. Ouch.

  18. Your biscuits look great, and a perfect way to celebrate your 101st post! Funny story about patting all the biscuits down--did you ever confess? Maple sugar is made by cooking the syrup to a higher temp and cooling it to crystallize it. There are tons of sugarbushes near me, so I use it when I can. It is very expensive, though!

  20. I love the fluted edges so many people have on their biscuits! Yours turned out wonderfully. Love the story about helping your mom in the kitchen...I had some helpers today, one helped by staying in the other room for a bit and the other stood between my feet while I rolled these out today and got a little flour on her cute cheeks. :)
